Roasted Garlic Potatoes

Originally adapted from Tyler Florence
- 2 lb. small Yukon Gold or russet potatoes, cut into "fries"
- 2 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 Tbsp. fresh parsley, minced
- Kosher salt & freshly ground black pepper
Roast for 30 minutes at 350, or until crispy.
